St. Patrick's Day themed lunch was an egg salad sandwich. I used leftover scrambled eggs from this morning, avocado and Applegate roasted chicken breast. He disliked the eggs this morning so I wanted to repurpose them. Fruit rainbow of strawberries, oranges, bananas, kiwi, blueberries and blackberries. He ate everything, including the eggs! His drink of the day is lemon infused water. 

Egg Salad
1/3 cup cooked scrambled eggs
1 tbsp whole milk or Greek yogurt
Dash of pepper & salt
1/3 an avocado, mashed
1 slice of deli meat 
1 slice of whole wheat bread (cut in half)

1. Mix eggs with salt, pepper, yogurt. Set aside. 
2. Mash avocado in a bowl.
3. Spread avocado on slices of bread.
4. Top with meat and eggs. Close sandwich and enjoy! 

For younger babies I would serve the sandwich  deconstructed. I cut it into strips because at 10 months, Hendrix is able to handle more.
