Mashed Potato Cupcakes

1 egg
2 cups mashed potatoes
1/4 cup peas
1/4 cup corn
1/4 cup cheese

Preheat oven to 375 degrees. Grease a nonstick muffin pan. In food processor blend ingredients. Scoop mixture evenly into muffin pan. Bake for 30-35 minutes until golden brown and crisp around the edges. First time making these and they were oh so good. Next time I will add more types of veggies or try them with sweet potatoes!
