Sweet Potato Zucchini "Crumbs"

Tonight I had every intention on making sweet potato and zucchini fritters. As my griddle slipped through my fingers and shattered on the floor, I knew I was going to have to come up with something else. I already had everything prepared, but no griddle, now what? 

Whenever I make fritters or pancakes in a skillet they come out terrible! A few years back I bought a griddle, made my first batch of griddle pancakes and I knew I would never attempt to make them in a skillet again. Well my griddle is in pieces and there's a baby whining at my feet so I have to be QUICK! 

1 zucchini
1 sweet potato, peeled
2 eggs 
2 tbsp whole wheat flour 
1/4 tsp salt, pepper, garlic powder, basil leaves 

Shred zucchini and sweet potato. 
Add to food processor.
Add eggs, flour, and seasoning. 
Blend until completely mixed. 
Heat oil in skillet over medium heat.
Add mixture. Let sit for 2 minutes then start to stir slowly. Repeat continually until golden brown (about 12 minutes).

*Hendrix absolutely loved these, as did I. It might be hard for younger babies to grasp this mixture but you could almost use them as a breadcrumb for other recipes.
