Broccoli Cauliflower Egg Muffins

2 eggs
3 tbsp milk (I use whole milk)
1/2 cup chopped broccoli/cauliflower
2 tbsp shredded cheese (I use cheddar)
Pinch salt/pepper

* Spray 8 mini muffin cups with nonstick spray
* Preheat oven to 350 degrees F
* Mix eggs, milk, salt and pepper
* Fill muffin cups evenly with broccoli/cauliflower mixture

* Add eggs, sprinkle cheese top

* Bake for 15-18 minutes
* If they are gooey, they need more time. They should feel cooked through.
