Cauliflower Broccoli Tots

I've made Cauliflower Tots numerous times. This time I wanted to add broccoli to pack more of a veggie punch! They were delicious. This is the only way I've ever enjoyed cauliflower, and one of two ways I enjoy broccoli. 

3 cups broccoli/cauliflower
1 1/3 cup breadcrumbs
1 cup shredded cheddar cheese
2 eggs

Preheat oven to 400 degrees F

* Boil florets until soft and drain

* In food processor add cooked florets, eggs, cheese, breadcrumbs
** If you do not have a food processor, simply finely chop florets and add everything to a bowl.
* Mix until combined
* Shape mixture to form tater tots (about 1 inch long)

* Place on baking sheet lined with parchment paper
* Bake 15 minutes, flip, and bake another 10 minutes

I love dipping them in sour cream, husband prefers ketchup and Hendrix loves them plain! These are great as a snack, paired with burgers, grilled cheese and so much more.
