Carrot Mac and Cheese Two Ways

Carrot Mac and Cheese
1/4 cup shredded cheddar
1 cup cooked pasta
1 tbsp butter
1 tsp parmesan cheese
1/4 cup carrot purée (1/3 cup steamed carrots, 1/4 cup unsweetened almond milk)

* Mix ingredients together in warm saucepan until well combined and cheese is melted

Carrot Mac and Cheese Cups
1 cup carrot Mac and Cheese
1 egg
2 tbsp breadcrumbs
Shredded cheddar cheese

* Preheat oven to 350 degrees F
* Mix together Mac and cheese, egg and breadcrumbs

* Spray mini muffin pan with cooking spray
* Evenly fill muffin pan with macaroni mixture and push down with back of spoon 
* Sprinkle with cheese
* Bake for 25 minutes or until cheese is crispy and golden brown
