Meatball Sub Cups

Ingredients:
Turkey Meatballs
Sliced whole wheat bread
Tomato sauce 
Sliced provolone 

Preheat oven to 350 degrees. Using a slice of bread, cut out a circle with a cup or cookie cutter. Spray muffin tin with nonstick cooking spray. Press a slice of circle bread down into each muffin tin hole. Spoon 1 tbsp of tomato sauce in each cup. Top with turkey meatball and a small amount of tomato sauce.


Using a smaller cookie cutter, cut circles of provolone cheese out. Top meatball with provolone cheese circle. 


Bake for 5 minutes or until bread is nicely toasted.


Hendrix absolutely loved these! Anything with bread and meat he'll gobble right up. I served his with kiwi, and steamed butternut squash mixed with cinnamon.
