Banana French Toast Sushi

1/2 banana, mashed
1 tbsp peanut butter
3 slices of bread
1/2 tsp honey 
1 egg
1 tbsp milk
1/2 tbsp unsalted butter
1/4 tsp cinnamon
1/2 tsp sugar

Mix together mashed banana, peanut butter and honey. Whisk egg and milk in a bowl, set aside. Using a rolling pin or cup if you do not have one, flatten slices of bread and slice off crust. Melt butter in frying pan on medium heat. Spread banana mixture on each slice. Roll tightly. Dip bread rolls in egg. Place in warm pan, cook on each side until golden brown. Mix together cinnamon and sugar. Once you take rolls out of the pan, sprinkle with cinnamon sugar. 

Serve whole or slice into sushi roll sized pieces.
