Chili Cheese Sweet Potato Fries

Chili

1 tbsp oil
1 pound ground turkey
2 tsp chili powder
1/2 tsp cumin
1/2 large onion, finely chopped
3 garlic cloves, finely chopped
15 oz can kidney beans, drained and rinsed
28 oz can diced tomatoes

In large saucepan on medium heat add oil. Once warm add turkey, 1 tsp chili powder and cumin. When ground turkey is fully cooked, transfer turkey to a bowl using a slotted spoon, leaving the juices in the pan. Add onion, garlic and other 1 tsp chili powder. Cook for about 3 minutes or until onions are translucent. Add kidney beans, diced tomatoes and juice. Cover and simmer for 15 minutes. Uncover, add cooked turkey and cook for another 10 minutes, occasionally stirring. 


Sweet Potato Fries

1 large sweet potato
1/2 tsp cinnamon
 1 tbsp olive oil
Dash salt and pepper

Preheat oven to 400 degrees F. Peel and slice potato into French fry shapes. Line baking sheet with parchment paper. Drizzle with olive oil, cinnamon, salt and pepper and mix well. Bake for 20-25 minutes.
