Taco Cups

2 tbsp shredded cheddar cheese
1/3 cup black beans, drained and rinsed 
1/4 cup cooked taco meat
1/4 cup cooked brown rice
1 tortilla


Preheat oven to 350 degrees F. Using a cookie cutter, cut circles in tortilla and fill mini muffin tin. Make sure to push tortilla fully in, forming a pocket for ingredients. Mix ingredients together in a bowl. Fill each tortilla cup with meat mixture. Bake for 10-12 minutes. Top with lettuce, tomato, sour cream or any other taco ingredients you love.
