Brown Rice Cups

1 cup cooked brown rice 
1/2 cup cooked veggies (corn, carrots, peas)
1/4 cup shredded cheddar cheese
1 egg
Pinch of onion powder
Pinch of garlic powder
Dash salt/pepper

Preheat oven to 350 degrees F. In a large bowl, mix ingredients together until well combined. Spray mini muffin tin with cooking spray. Using a spoon, fill each hole with mixture and press down firmly with back of spoon. Bake for 12 minutes.
