Overnight French Toast Casserole

8 slices sourdough bread (day old bread is best)
4 eggs
1/4 cup sugar
1 cup milk
2 tsp vanilla
1/2 tsp cinnamon

* Grease 8x8 casserole dish with melted butter.
* Tear bread into chunks and place in casserole dish.
* In large mixing bowl, combine eggs, sugar, milk, vanilla and cinnamon.
* Pour over bread chunks and mix thoroughly to evenly coat.
* Cover and refrigerate overnight.

Topping
1/3 cup packed brown sugar
2 tbsp all purpose flour
1/2 tsp cinnamon
2 tbsp cold butter, thinly sliced

* Pull casserole dish from refrigerator.
* Preheat oven to 350 degrees F. 
* In a cup mix together brown sugar, flour and cinnamon.
* Evenly spread thinly sliced butter on top if bread mixture.
* Evenly sprinkle with brown sugar mixture.
* Bake for 45-55 minutes or until golden brown.
* Serve with or without maple syrup.
