Shrimp Fried Rice

1 cup frozen vegetables (corn, carrots, peas)
1 tsp sesame oil
2.5 tbsp low sodium soy sauce
1/4 tsp white pepper 
1 cup cooked shrimp
2 green onions, chopped
1 tbsp olive oil
1/2 yellow onion, chopped
2 garlic cloves, minced
2 cups cooked brown rice

In a bowl mix together sesame oil, soy sauce and white pepper. Set aside.
In a deep frying pan or wok, warm olive oil over medium heat. 
Once warm add onions and garlic. Cook until translucent, about 3-4 minutes.
Add frozen vegetables. Cook until tender, about 4 minutes.
Add cooked rice, cooked shrimp, green onions and soy sauce mixture.
Mix thoroughly and heat until warm.
Serve immediately. 

**Tip: I've found that using day old rice makes the best fried rice.
