Arancini (Rice Balls)

2 cups cooked rice (see notes)
2 eggs
1/2 cup shredded Parmesan cheese
Dash of salt/pepper
1/2 cup Italian breadcrumbs
6-8 cubed pieces of fresh mozzarella cheese

In a large bowl, mix together rice, eggs, salt, pepper and parmesan cheese. Spoon about a tablespoon of rice mixture into your hand, place a mozzarella cube in the center and about another tablespoon of rice mixture on top. Roll into a ball. Set aside. In a bowl mix together breadcrumbs, salt and pepper. Roll each rice ball in breadcrumb mixture.

Place on parchment lined baking sheet. Place baking sheet in refrigerator for 15 minutes. Preheat oven to 400 degrees F. Bake for 20 minutes or until golden brown. Serve with warm marinara sauce. 

*Note: I used Basmati rice that was cooked the day before.
