Creamy Shrimp & Mushroom Fettuccine

3 tbsp olive oil
1 tbsp minced garlic
1 cup shrimp
1/2 tsp paprika
1/2 tsp dried basil leaves
1 cup mushrooms
1/2 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese
1/4 cup pasta water 
1/2 box fettuccine pasta
1/2 cup milk

Cook fettuccine pasta until al dente. Once cooked drain, save 1/4 cup pasta water. In the colander drizzle 1 tbsp olive oil on pasta, working it through the noodles. 

In a skillet over medium heat add 1 tbsp olive oil, garlic, paprika, and dried basil. Cook for about 2 minutes until hot, then add shrimp. Cook shrimp until pink, about 5 minutes, stirring occasionally. 

To same skillet add 1 tbsp olive oil and roughly chopped mushrooms. Stir well. Cook for 3 minutes.  Add milk, cheeses and stir thoroughly. Let cheeses melt and sauce to thicken for about 3 minutes. Add cooked pasta and toss. Top with a sprinkle of paprika and dried basil leaves.
