Hidden Veggie Chicken Nuggets

1/2 cup frozen corn
1/2 cup frozen peas
1/2 cup frozen carrots
1/2 cup water 
1 egg
1lb ground chicken
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 cup Italian breadcrumbs or panko

Preheat oven to 400 degrees. In a large microwave safe bowl add frozen veggies and water. Microwave for 3 minutes or until tender. Drain water. Add veggies and egg to blender and purée. 

Add purée to large bowl. Add in ground chicken, salt, pepper, garlic powder and onion powder. Mix thoroughly until well combined.

 Place breadcrumbs in a bowl. (If using panko add some seasonings- oregano, basil, etc). Take a nugget sized dollop of chicken mixture, toss in breadcrumbs and roll into a nugget or ball.

Lay on parchment lined baking sheet. Bake for 20-25 minutes, flipping halfway.
