Raspberry Roll Ups

2 slices of bread
1 tsp sugar
1/4 tsp cinnamon
2 tsp cream cheese
6 raspberries
1 tbsp unsalted butter

Slice off bread crust. Flatten bread slices with rolling pin or cup. Spread 1 tsp of cream cheese per slice. Wash raspberries and squish in hand, spreading 3 raspberries per slice. Tightly roll. Warm butter in frying pan over medium heat. On a plate mix together sugar and cinnamon. Once bubbling add roll ups, seam side down. Rotate every 1-2 minutes. Cook until golden brown. Take off burner and immediately roll in cinnamon sugar mixture. Serve whole or slice into "sushi" rolls.
