Strawberry Muffins

1 3/4 flour
1/3 cup sugar
1 tbsp brown sugar
1 tbsp baking powder
1/2 tsp salt
1 egg
1 tsp vanilla
1/2 cup milk
1/4 cup vegetable oil
1 cup diced strawberries (about 10)

Preheat oven to 350 degrees F. In a large bowl, add flour, sugars, baking powder and salt. Mix thoroughly and set aside.

In a second bowl, add egg, vanilla, vegetable oil and milk. Mix thoroughly and set aside. Add diced strawberries to flour mixture and coat evenly. 

Add wet ingredients to dry ingredients and mix until well combined. If a little dry, add 1 tbsp milk. Fill lined muffin tin with batter, about 2/3 full. Bake for 20 minutes. Cool on wire rack.

* Makes 12 muffins. Store in airtight container.
