Butter Tarts

2 packs of mini fillo dough shells
1/2 cup corn syrup
1/2 cup brown sugar, packed
1/2 cup soft butter
1/2 tsp vanilla extract
Pinch of salt
2 eggs

Preheat oven to 400F. In a large bowl add brown sugar, corn syrup, and butter. Mix until sugar has dissolved and butter is creamed. Add eggs, salt and vanilla. Mix very well. Lay fillo dough shells on parchment lined baking sheets. Fill fillo shells with mixture. Bake for 15-20 minutes. Filling should be bubbly and browned. Cool before serving because once you start eating these, you will not stop, enjoy!
