Carrot Zucchini Pancake Muffins

1 cup of your favorite pancake batter (homemade or store bought)
1 cup finely chopped zucchini
1 cup finely chopped carrot
1/4 tsp vanilla extract 
1/2 tsp cinnamon 

Preheat oven to 350F. Grease your mini muffin tin. In a large bowl mix ingredients together well. Fill each muffin hole about 3/4 full. Bake for 12-15 minutes or until toothpick comes out when when inserted.

Serve plain, top with butter, syrup or honey.
