Oven Baked Fajitas

1-2lbs boneless, skinless chicken breasts (cut into strips)
3 tablespoons olive oil
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
Salt & pepper
1 (15oz) can of diced tomatoes (drained)
2 bell peppers, any color (sliced & seeds removed)
1 medium onion (sliced)

Preheat oven to 425F. Grease a 9x13 oven safe baking dish with cooking spray.

Place chicken strips in baking dish. In a small bowl combine olive oil, oregano, garlic powder, cumin and chili powder. Pour over chicken and stir to evenly coat.

To chicken mixture add peppers, onions and tomatoes. Stir well.

Bake uncovered for 20-25 minutes or until vegetables are fork tender and chicken is cooked through.

Serve with tortillas or taco shells and toppings. Some toppings we like are sour cream, hot sauce, shredded lettuce.
