Roasted Lemon Garlic Chicken

1 whole chicken
2 lemons, quartered
4 medium carrots, sliced into sticks 
6 red potatoes, quartered 
1/4 cup butter (half a stick)
1/2 onion
6 garlic cloves 
Olive oil
Oregano
Dash of salt
Pepper
Garlic power
Onion powder
Paprika

Preheat oven to 400F. In a large bowl mix together 1 (quartered lemon), potatoes, 3 garlic cloves, onion, carrots and celery. Drizzle with olive oil, pinch of salt, garlic powder and oregano. Place in bottom of roasting pan. 

Microwave butter until partially melted and soft. Rinse chicken, dry thoroughly with paper towels. Rub butter all over chicken, under the skin and inside of the cavity. Toss 1, quartered lemon and 3 garlic cloves in the cavity.

Generously sprinkle chicken with oregano, garlic powder, onion power, pepper, a pinch of salt and paprika.  

Place chicken in roasting pan. Bake for 60-75 minutes or until golden brown and chicken is thoroughly cooked. Once finished take out of oven and let rest for 10 minutes.
