Caprese Orzo Salad

1 cup dry orzo
2 tablespoons olive oil
1/4 cup balsamic vinegar
1 teaspoon Dijon mustard
1/2 teaspoon salt
Freshly ground black pepper, to taste
10 grape tomatoes, halved
Fresh cubed mozzarella cheese

Follow instructions on box to cook orzo. Once finished add drained, cooked orzo to a bowl and let cool. Toss with olive oil, balsamic vinegar, mustard, salt and pepper. Once well combined, gently mix in tomatoes and cheese. 

This pasta is very versatile. Fresh basil makes this dish even better but I didn't have any so I sprinkled some dried parsley leaves on top.

The three of us each had ours differently:
 Hendrix had his with plain grilled chicken
 I had mine with rosemary garlic grilled chicken
 My husband had his with sautéed garlic shrimp.

Feel free to add in other vegetables, meat, a different type of pasta/rice or regular tomatoes. This dish couldn't be any easier.
