Crockpot Apple Butter

10 small Gala apples
1 tablespoon cinnamon
1/2 cup water
Large pinch of nutmeg
1/4 cup white sugar 
1/4 cup packed brown sugar

Core and dice apples. Peel if desired. Add all ingredients to a crockpot. Mix thoroughly to evenly coat apples. If you want a sweeter apple butter, add more sugar. 

Cook on low for 5 hours, stirring occasionally. Blend or use immersion blender. Put back into crockpot. 

Put 2 skewers in between the crockpot and the lid to vent the steam so the apple butter doesn't get liquidy again and thickens up. Cook for another 5 hours, stirring occasionally. 

Turn off crockpot and let cool for atleast an hour. Transfer to sterile jar or container. Refrigerate for up to a week.

*Apple Butter has a strong flavor. We love to mix it into smoothies, yogurt, oatmeal, pancakes, French toast, and fruit sandwiches. 

Apple Butter Oatmeal
1/3 cup old fashioned oats
1/3 cup milk
1 tablespoon ground flaxseed

Add ingredients to a mason jar. Mix thoroughly. Refrigerate overnight. In the morning, spoon into a bowl and top with apple butter.
