Potato Cups

2 cups cold mashed potatoes
1/3 cup shredded cheddar cheese
Salt/pepper to taste
1 egg
3 strips cooked bacon
4 green onions
1 tube pillsbury dough (sheet or crescent rolls)

Preheat oven to 350F. In a bowl mix together mashed potatoes, cheese, salt, pepper, egg, 2 strips bacon crumbled, 3 finely chopped green onions.

Spray 12 mini muffin tin with nonstick spray. Fill each muffin tin with dough, making sure to press down and create a cup for filling. Spoon potato mixture into each cup. 

Bake for 15-20 minutes or until dough is golden brown. When finished top with green onions, bacon and sour cream, if desired.
