Easy Pancake Recipe

1 cup all purpose flour
1 cup milk
1/2 teaspoon vanilla extract
1/2 teaspoon salt 
2 tablespoons sugar 
2 teaspoons baking powder
1 egg
2 tablespoons vegetable oil

Preheat skillet or griddle to medium heat or 325 degrees. Grease with oil or butter. In a large bowl mix together dry ingredients (flour, salt, sugar, baking powder). Gradually mix in wet ingredients (milk, vanilla, egg, vegetable oil). Mix until well combined. Add fillings if desired. 

Spoon 2-3 tablespoons (depending on desired pancake size) on skillet/griddle forming pancakes. Cook on one side until bubbles start to burst. Flip using a spatula and cook on other side for 2-3 minutes or until golden brown. 

Favorite pancake fillings:
Shredded or puréed carrot 
Shredded carrot/zucchini
Mashed banana and almond butter
Shredded apple and cinnamon 
Whole Blueberries
Raspberries
Diced strawberries
Pumpkin purée
Steamed/mashed sweet potatoes

Favorite pancake toppings:
Honey
Pure maple syrup
Agave nectar
Sautéed cinnamon apples
Homemade Jam (blueberry, strawberry, cranberry)
Cream cheese
Sautéed cinnamon bananas 
Sautéed strawberries, raspberries, peaches, blueberries
