Potato Pancakes

1 bag of Russet potatoes, peeled and cubed
1/4 medium yellow onion, chopped
1 tsp baking powder
2 eggs
1/2 cup flour
1 tsp lemon juice
Salt and pepper to taste

*Add all ingredients to a blender or food processor. 
*Blend until completely puréed and it looks like a batter.
*Heat oil in a pan or griddle. 
*Spoon batter onto griddle. Flatten/spread so pancakes are thin. (You can keep pancakes thicker if desired).
*Cook on each side until golden brown.
*Drain on paper towel lined plate.

Serve with sour cream/Greek yogurt and applesauce.

Tip: oil griddle before cooking each batch.
