Turkey Bean Chili

1 pound Ground Turkey
1 Carrot
2 Celery Stalks
1 Medium Yellow Onion
4 tbsp Olive Oil
1 tbsp Tomato Paste
29oz Can of Tomato Purée 
2 tsp Pepper
1/2 tsp Kosher Salt
1/2 tsp Dried Basil
2 tsp Chili Powder
2 tsp Ground Cumin
16oz Can of Garbanzo Beans
16oz Can of Kidney Beans
3 cups Low Sodium Chicken/Vegetable Broth
1/2 cup Shelled Edamame
1/2 cup Corn

*Add 2 tbsp olive oil to a deep large saucepan. Dice carrot, celery and onion. Add to pot. Mix and sauté over medium heat until vegetables are soft.
*In a frying pan, add 2 tbsp olive oil and cook ground turkey. 
*Add dried basil, cumin, chili powder, salt and pepper. Mix thoroughly and cook for another 2 minutes. 
*Add tomato purée, tomato paste, chicken stock and cooked turkey. Mix well and simmer for 30 minutes.
*Add edamame, corn, garbanzo and kidney beans. Mix well and simmer for another 15 minutes.
*Top with cheese, sour cream or any other desired topping.
