Shrimp Cakes

2 cups cooked shrimp
1/4 cup onion, finely chopped
1 egg
1 teaspoon kale powder
Salt and pepper
1 tablespoon Greek yogurt or mayonnaise 
1/2 teaspoon minced garlic
1 slice toasted whole wheat bread, finely chopped

Add cooked shrimp to a blender and pulse until somewhat puréed. You no longer want to see whole pieces of shrimp. In a large bowl add shrimp puree and all other ingredients. Mix well. 

Warm 2 tablespoons of oil on a griddle or frying pan. Form patties with shrimp mixture. Add to warm griddle/pan. Cook on each side for 4-6 minutes or until golden brown.
