Carrot Sauce

2 large carrots, peeled/diced/steamed
1 tablespoon olive oil
1/4 cup diced sweet onion
1/4 cup tomato sauce
1/4 teaspoon dried oregano
1/4 teaspoon dried basil 
1/4 teaspoon garlic powder

Purée carrots in blender using some of the water they were steamed with. Heat oil in a saucepan over medium heat. Add onion. Cook until translucent. Add all other ingredients. Bring to a boil then simmer uncovered for 10 minutes.


*Use sauce for pastas, pizzas, sandwiches, meatballs, etc.
