Easy Maple Granola

1 cup old fashioned oats
1 heaping teaspoon of coconut oil, melted
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
2 tablespoons maple syrup 

*Preheat oven to 350F. Spread oats out on parchment lined baking sheet. Toast oats for 10-15 minutes stirring every few minutes. 
*While oats are cooking, add all other ingredients together in a bowl. 
*When oats are finished, add to liquid mixture. Stir well until evenly coated.
*Turn oven off.
*Spread oat mixture on parchment lined baking sheet.
*Place baking sheet in OFF oven for 5 minutes.
*Let cool completely before storing.
