How To Cook Lentils & Lentil Sauce

How To Cook Lentils
1 cup green lentils (rinsed & any debris removed)
2 cups water
1 tablespoon dried oregano
1 tablespoon dried basil
1/4 teaspoon kosher salt
1/4 teaspoon pepper 

Add all ingredients to a medium saucepan. Bring to a boil, then simmer (uncovered) for 20-30 minutes or until lentils are soft. Make sure lentils are covered with water at all times. You may need to add a little water as they cook.

Lentil Carrot Sauce
1/3 cup puréed carrots
15oz can of sauce
1 teaspoon minced garlic 
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 cup grated Parmesan cheese
1/4 cup diced onion 
1/4 cup heavy cream
1 tablespoon olive oil 
1 cup puréed lentils

Heat olive oil in a deep frying pan. Add onion. Cook until translucent. Add garlic. Let cook for 2 minutes, making sure not to burn. Add all other ingredients. Bring to a boil, then simmer for at least 10 minutes. Add to any pasta or pizza.
