Banana Nut Mini Muffins

1 egg
1 ripe banana, mashed
1 cup whole wheat flour
1/4 cup granulated sugar 
1/4 cup packed brown sugar 
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
2 tablespoon Greek yogurt
1 tablespoon coconut oil, melted
1 tablespoon walnuts, chopped

Preheat oven to 350 F. Spray mini muffin tin with cooking spray. Set aside. 

In a mixing bowl, add egg, banana, vanilla extract, Greek yogurt and coconut oil. Mix until well combined. To the same bowl add flour, sugars, salt and baking soda. Mix well. Evenly distribute batter into prepared muffin tin. Sprinkle tops of muffins with chopped walnuts. 

Bake for 14-18 minutes. 

**Whole wheat flour can be substituted for preferred type. Sugars can be substituted for preferred sweetener.
